
Chad and I had just gotten home from church camp and I was out of energy. I needed an easy supper that was going to taste good. I went to E-Mealz for inspiration and this is what I found. Chad loved it and we both chowed down. Super yummy!
Cilantro Bowl
Ingredients:
1 lb ground beef, browned and drained
1 teaspoon garlic salt
1 teaspoon cumin
1/2 teaspoon sage
1/2 teaspoon pepper
White rice, cooked
15 oz can corn, drained
15 oz can black beans, drained
1/3 cup chopped red onion
2 tomatoes, diced
(I used a can of tomatoes since my tomatoes are still green)
1/4 c. jalapeno slices, chopped fine
1/2 teaspoon of salt
1 cup of shredded cheese
1 bunch of cilantro, chopped
8 oz of sour cream
Directions:
Brown ground beef until cooked. Drain. Add spices.
Cook white rice.
Combine corn and beans in bowl. Cook for 4 minutes in microwave. Keep warm.
Dice tomatoes into small pieces. Toss with chopped onion, jalapenos, and salt. (I went ahead and added the fresh cilantro here to make the perfect salsa)
Assemble in these layers: rice, beef, corn and beans, salsa, cheese, cilantro, sour cream.
Eat!
